Golden Pascal Celery is an older French heirloom that dates back to the 1930s. This self-blanching variety is one of the best varieties to grow for fall and early winter crops, if not the go-to variety. Golden Pascal will start as a light green color and mature into a golden yellow before it's time to harvest. The sturdy stalks are crisp, juicy, and full of flavor. The flavor is best described as nuttier than traditional market celery varieties.
