Red Carrots are believed to have originated in the Middle East for several hundred years. Most varieties of red carrots today are a cross between the traditional Western sweet orange carrot and the Middle Eastern variety. Atomic red is believed to be one of these varieties. The Atomic Red carrot is an 8 - 10 inch long root that is crisp and sweet. This variety is also extremely high in lycopene, especially when cooked (the same with tomatoes). These carrots are great to successive sow and after trying them, they're sure to be a new favorite.

 

The Atomic red carrot is one of several varieties preserving the natural colors of carrots past. Here in the West, we are accustomed to the traditional orange variety, but these are relatively new in the botanical timeline of carrots. If you want to taste what an heirloom tastes like, the Atomic Red is a great place to start.

 

They are easy to grow and can be prepared in numerous ways. Cooking them deepens their red color, blending them adds incredible sweetness to smoothies, and glazing them in butter and brown sugar is an experience. These also pair well with ginger. These will grow in containers, but make sure the container is deep enough to accommodate the roots (at least 10 inches deep).
