Blue Hubbard Squash seeds
The Blue Hubbard squash is the perfect way to ring in the first signs of Autumn. With its large size, one squash could easily feed a family. These squash ripen to a bronze-green, to a pale blueish green, and even to a grey color. The flesh inside of the Blue Hubbard squash is a soft, yellow, and tender fine-grained flesh that is reminiscent of a nutty sweet potato with a drier texture.
These squash are not only highly decorative, but they are also fun to grow. These can reach upwards of 50 pounds but can be picked smaller if there is concern over garden space or storage. Due to their extremely thick shell, these will last well through the winter, and even though the following spring. The shelf life is impressive, to say the least.
After harvesting your Hubbard, you can eat the seeds as well. Due to their size, these are ideal for roasting, smoking, or making seasoned seeds or pralines in a crockpot.
