Yellowstone carrots are a stunning canary/lemon yellow color throughout. Unlike some other carrot varieties, these will keep their color when cooked, and won't get pale or dull. This will help create vibrancy and contrast to any dishes that you add them to. 

 

This hybrid variety was created by a Dutch seed company who states this variety of carrots can easily grow in any soil. These also compete with weeds well since their roots will rob the weeds of nutrients and water. These have a more subtle flavor than most sweeter varieties. Since it is more savory, this is popular in carrot ginger soups, perfect for days when the weather is a bit more on the crisp side. 

 

These will grow well in grow bags, containers, and raised beds (make sure they are deep enough). Plant these in early spring, and again in fall for a winter harvest if you have a longer growing season. 

These have intermediate resistance to altermaria leaf blight, black rot, cercospora leaf blight, and liquorice rot. Your carrots will reach around 9".
