American Tondo Pumpkin Seeds

The American Tondo pumpkin is one of the more unique-looking pumpkins. We first saw this at a farm in Erie, Colorado. Despite the name, this is an Italian squash. This squash can grow small to medium-sized. The squash is a dark olive/army green color. The independent ridges that run up the squash are a brighter orange color. If left to cure in the sun, the squash will turn bright orange entirely, retiring the darker green colors. 
 
The flavor has been described as being similar to butternut squash, and the flesh is somewhat spongey, wet, and yellow. Even though this is a winter squash, it can be treated like a summer squash in that you can pick it when it is young and treat it as you would a zucchini. The skin will be thin, and the squash will be exceptionally tender. 
 
The American Tondo has some popular uses in the U.S. and Italy. They include stuffing recipes, such as the pizza stuffed Tondo, stuffed Provençal courgettes, squash fritters, and Tora di Riso di Graziella.
